During my time with Jens Fager, I was fortunate to take responsibility for much of the design process behind the platters created for the Norwegian national team at this year's Bocuse d'Or final in Lyon. The platter is a key element of the competition, serving both a functional and sculptural role by presenting the team's culinary creations in a way that highlights their flavors, techniques, and storytelling. It also serves as a reflection of the team's vision and national identity.

Inspiration
The platter is designed to reflect the nationality of the team, drawing inspiration from the architectural grandeur of Nidaros Cathedral in Trondheim. As Norway's most significant Gothic cathedral, Nidaros is a masterpiece of intricate stonework, towering spires, and mesmerizing rose windows. The platter echoes these elements through its detailed patterns, symbolic motifs, and structural elegance, embodying the rich history and artistry of one of Norway's most iconic landmarks.

Designing the platter involved numerous iterations, balancing artistic expression with practical functionality. It had to hold 16 bi-colored ravioli, a venison shoulder and foie gras pie, and a warm fruit-based garnish, all arranged for 16 servings. One of the biggest challenges was finding a beautiful, harmonious composition that showcased each element while keeping the platter manageable in weight and easy to handle. Thermal management was crucial, so stainless steel plates were mounted under each section to keep everything at the perfect temperature. The final design drew inspiration from Nidaros Cathedral, translating its intricate patterns and elegance into a slightly modern interpretation. The result was a platter that combined artistry, precision, and functionality, reflecting Norway's culinary heritage and the spirit of the Bocuse d'Or.
